Cinnamon Powder
(Cinnamomum cassia)
(3% oil)
Cinnamon comes from tropical evergreen trees related to bay laurel, avocado and sassafras. Selected sections of bark are taken from the tree and the quills taken are often 3 1/4 inches in length. The sections are then rolled into cylinders about 1/2 inch in diameter. Sometimes quills up to 3 ft. can be found, especially in its native Sri Lanka. The fragrance of cinnamon is sweet, perfumed, warm and pleasantly woody with no trace of bitterness or overpowering pungency. This helps us to appreciate why it has been thought of for centuries as having aphrodisiac properties. Cinnamon combines well with: allspice, caraway, cardamom, chili, cloves, coriander seed, cumin, ginger, licorice, nutmeg, star anise, tamarind and turmeric.
